What influences the type of millstone?

Plane-parallel millstones work faster, but their service life is one and a half to two times shorter than conical ones (they will have to be changed more often) and the noise level is higher.

Conical burrs work slower, making it impossible to burn the coffee. In addition, conical millstones are less noisy compared to plane-parallel ones, but are slightly more expensive.

Which type of millstone is best?

It is better to buy a coffee grinder with conical burrs. It may be a little more expensive, but not significantly – by 10-15 percent. But the result will be visible “in person”.

Millstones are made of hardened and stainless steel, ceramics, stone (an alloy of ceramics and corundum).

What influences the material of the millstones?

One important point. The resource of metal millstones is 250-500 kg of coffee, for ceramics – up to 1,000 kg. After the resource is exhausted, you will need to buy new millstones at the service center. Otherwise, the coffee grinder will stop grinding coffee properly.

What material is best for millstones?

As with manual coffee grinders, I recommend ceramic burrs. The reasons are simple - ceramics are harder than steel, absorb odors less and are not at all afraid of moisture. True, burr coffee grinders with ceramic burrs are a rare thing. Basically, the millstones are still made of stainless steel.

If you can find a coffee grinder with stone burrs, then this will be your best choice. Unfortunately, I have not seen such coffee grinders. But maybe I was just looking poorly? 🙂

Adjusting the grinding degree

All burr coffee grinders have the ability to adjust the degree (fineness) of grinding. Moreover, each coffee grinder has its own minimum and maximum powder particle sizes. The usual number of grinding levels is from 8 to 16.

In addition to the number of grinding levels, you need to pay attention to how they are adjusted.

Sometimes the mysterious phrase “precision millstones” is written on coffee grinders. What does it mean? The particles of beans in the grind cannot be 100% identical - any coffee grinder produces some smaller pieces at the output. This is called "grind precision". The more “more accurate”, i.e. The more evenly grinded, the better. Precision millstones are highly accurate and the finished powder contains significantly more pieces of the same size than in coffee grinders with simple millstones.

How is the adjustment made?

Changing the grind size occurs when you change the distance between the burrs - the greater the distance at the exit of the burrs, the larger the coffee powder particles will be.

Adjustment is often made using a ring located at the bottom of the bean bowl on the outside. In other cases, adjustment can occur in a different, but also simple way.

In rare cases, adjustment requires quite complex manipulations.

For example, unscrew the nut that holds the inner cone, then move the cone in the desired direction and tighten the nut.

Tip: It is better to adjust the finer grind while the coffee grinder is running, removing the grains in advance.

What exactly should you choose?

The grind size that suits you directly depends on the type of coffee you drink. If you cook in a French press, the pieces should be large. If it’s espresso, then medium. If in Turkish - then into dust. So see if the grind fineness suits you. If you're lucky, the store will give you the opportunity to test drive the coffee grinder. In this case, check the coarsest and finest grinds. If we disassemble such a grinder and take a close look at what these same millstones look like (see photo on the right), we will see one unpleasant feature - “teeth” rising above the main working surface. Unfortunately, it is these “teeth” (not the notches on the disk itself) that do 80% of the work. Because of this, the coffee bean is mostly “broken”, “crushed” as on cheaper blade coffee grinders, rather than neatly ground (at the same time increasing the service life of the discs). However, the remaining 20% ​​of the work still falls on the disk, which allows you to get more or less uniform grinding, similar to the result of a real millstone device.

These are the pseudo-millstones that stand on Delonghi KG 79, Delonghi KG 89(differs from the 79th only in the metal case), and also on Krups GVX2, Polaris PCG 1620 And Vitek VT-1548(), which costs two times cheaper than any other of this trinity as of 2018, discontinued from production and sale. They all have identical millstones. Slightly different, but similarly constructed millstones Gaggia MM. In all of the above models, the grinding adjustment works adequately, although the minimum grinding degree could be finer. In any case, among the pseudo-millstones, excluding the completely disgraceful quality products under the Erisson and First brands, the cheapest at the beginning of 2018 is Delonghi KG 79.

3. The third type is inexpensive coffee grinders with conical burrs. Average price: 8-11 thousand rubles.

The key word in the description of this class is “inexpensive”. In fact, there are only 3-4 models of this type on the Russian market - these are Rommelsbacher EKM 300 (), Solis Scala(), Caso Barista Flavor and BORK J701(not to be confused with J700!). Apparently Bork took the Finnish Wilfa WSCJ-2 coffee grinder as a basis; they are as similar as two peas in a pod.

Based on Rommelsbacher’s testing, I will quote here the conclusions from his review, which are valid for this class of entry-level burr coffee grinders:

  • Obviously, such a coffee grinder is significantly better than any pseudo-millstone, it’s just on a different level.
  • With a certain type of grain and requirements for espresso, you can even customize its operation in such a way that the result will be practically indistinguishable from millstones costing 15+ thousand. However, the range of settings and small diameter do not allow us to say that this is a professional milk, capable of producing exactly the drink that the user wants from any blend. Roughly speaking, here the grain must be selected for a coffee grinder.
  • That is, a similar coffee grinder, if you can buy one thousand for 8 rubles, can be recommended for moderate consumption of several cups at home, including for espresso. For aero and other types of presses, filtered coffee and geysers - generally excellent.

4. “Expensive”, but in fact typical burr coffee grinders. Average price: 15,000 rub.

What kind of ceramics is this, you ask? I’ll answer - this is the signature feature of all “Saikas”. Such ceramic millstones are cheaper to produce and do not overheat the grain during long-term fine grinding, plus they grind grain more quietly than steel, however, they are fragile like any ceramics and can crack if hit by a foreign object.

Delonghi coffee machines of all series (ESAM, ETAM, ECAM) use metal conical millstones. Their exact outer diameter is unknown; Delonghi itself does not disclose the dimensions, and since metal millstones almost never fail, it never occurred to anyone to measure them in search of a replacement. But from memory and by eye - somewhere around 4 cm. It will be necessary to somehow disassemble any Delonghi coffee machine and measure the exact diameter of the millstones...

As you yourself may have already understood, modern coffee machines already have a quite serious coffee grinder built into them. There is no need to buy a separate one for them in terms of coffee quality.
